Ingredients

  • 2 packs fresh or frozen udon noodles
  • 1 cup shredded carrots
  • 1 cup sliced rainbow bell peppers
  • 2 eggs
  • 2–3 tbsp FreshZen Korean Chili Crunch Sauce
  • 1 tbsp soy sauce (optional)

Instructions

  • Prepare Noodles: Cook udon per package (or blanch briefly to loosen). Drain and set aside.
  • Stir-Fry Veggies: Scoop out 1/2 tablespoon of Korean Chilli Crisp oil. Heat oil in a large pan or wok. Add carrots and bell peppers; sauté 3–4 minutes.
  • Add Noodles: Add udon to the pan and toss.Sauce It: Stir in FreshZen Korean Chili Crunch Sauce and soy sauce if desired. Toss until glossy and heated through.
  • Fry Eggs: In a separate pan, cook eggs over-easy.
  • Serve: Plate noodles, top with an egg, and sprinkle scallions over the top.
