Prepare Noodles: Cook udon per package (or blanch briefly to loosen). Drain and set aside.
Stir-Fry Veggies: Scoop out 1/2 tablespoon of Korean Chilli Crisp oil. Heat oil in a large pan or wok. Add carrots and bell peppers; sauté 3–4 minutes.
Add Noodles: Add udon to the pan and toss.Sauce It: Stir in FreshZen Korean Chili Crunch Sauce and soy sauce if desired. Toss until glossy and heated through.
Fry Eggs: In a separate pan, cook eggs over-easy.
