INGREDIENTS
2 tbsp olive oil
1 onion diced
3 tsp of Freshzen Garlic sauce
2 tsp of ground coriander
2 tsp of ground turmeric
2 tsp of Indian garam masala
2 tsp of red chilli flakes
2 tsp of curry powder
2 tsp of ground cumin
1 tsp of salt
1 cup water
2 (10 ounce) packets of fresh or frozen spinach
3 diced tomatoes
2 cups of firm tofu cubes
INSTRUCTIONS
Heat 1 tablespoon olive oil in a skillet over medium heat; cook and stir onion until slightly tender, about 5 minutes. Add Freshzen garlic sauce, coriander, turmeric, garam masala, red pepper flakes, curry powder, cumin, and salt; cook and stir until fragrant, about 1 minute.
Mix water, spinach, and tomatoes into the onion mixture; simmer for 20 minutes. Remove from heat and cool slightly for about 5 minutes.
Transfer spinach mixture to a blender and blend until smooth.
Heat remaining 1 tablespoon olive oil in a skillet over medium heat; cook and stir tofu until it lightly browns for about 5 minutes. Add pureed spinach mixture into skillet with tofu and stir well. Cook until heated through, for 3 to 5 minutes. Tofu is Spinach Curry in now ready to serve. Garnish with fresh cilantro or herbs of your choice and serve with rice or flatbread.
